Approximately five hundred amino acids occur naturally. Twenty of these amino acids serve as building blocks for proteins in the human body; these are referred to as "fundamental amino acids." These fundamental amino acids can be further subdivided into the categories "essential," "semi-essential," and "non-essential." Taurine is not actually a true amino acid in terms of its biochemical structure (although it is considered an amino acid) and is not incorporated into proteins. In the body, taurine is primarily found in nerve tissue, eyes, and muscle tissue.
Taurine is a semi-essential nutrient for older children and adults and is synthesized primarily in the liver and brain from the sulfur-containing amino acids cysteine and methionine; vitamin B6 is involved in this conversion. Babies and young children cannot yet produce taurine themselves; for them, taurine is an essential nutrient. Endogenous synthesis is limited, and dietary intake is important for a healthy taurine status, especially if taurine requirements are elevated. Since taurine is primarily found in meat, fish, and poultry, vegetarians and vegans are more likely to have insufficient dietary intake.
