Koya tofu freeze-dried
Koya tofu is tofu that has been frozen and then dried. Tofu is an excellent soybean product that has been used in the East for hundreds of years. It's a good alternative to meat. Soybeans contain almost 40% protein and are easily digested and absorbed faster than animal protein. Tofu curdled with nigari is an alkaline food but has a short shelf life.
Muso's koya tofu has all the ingredients of tofu and, because it's freeze-dried, has a long shelf life. Koya tofu has a completely different flavor and texture than fresh tofu. It's a great ingredient for plant-based sushi.
