Kohren is a fine powder made from ground dried lotus root. It is used, among other things, to make lotus sweets which can also serve as chocolates. For making tea, the rhizomes of the plant growing along the bottom are used. The main components of these rhizomes contain asparagine, nelumbine, and starch.
The rhizomes of the lotus are harvested in winter, when the nutrient content is highest. To make kohren, these rhizomes are crushed and finely chopped. Subsequently, the chunks are sieved out to remove the fibers and they are ground into a fine powder.
