Mugi miso is made from organic soybeans and barley. This miso is a perfect blend of all five flavors: salty, sweet, bitter, sour, and umami. Mugi miso is handcrafted and fermented for at least 12 months in 100-year-old cedarwood barrels. This time is necessary to deepen the flavor and add health benefits. The result is an authentic Japanese seasoning that lies somewhere between hatcho and shiro miso. Mugi miso is delicious in miso soup, but also pairs well with noodle, vegetable, and tofu dishes. Mugi miso has a moderately strong flavor and is slightly saltier than genmai miso.
