Genmai miso is made from organic soybeans and unpolished brown rice. It is traditionally made by true Japanese specialists. In this process, genmai miso ferments for a full 12 months in large, 100-year-old cedarwood barrels. This gives the miso a deep, authentic, and incomparable flavor. Genmai miso is ideal as a base for (miso) soups, sauces, and marinades, and a useful seasoning for stir-fries and stews. Genmai miso has a medium-strong flavor.
