Agar agar is an organic binding and gelling agent with enormous binding power. It's comparable to gelatin, but agar agar is even more powerful and 100% vegan. Agar agar is made from 100% red seaweed, also known as kanten. You can use it to make delicious vegan cheesecakes or (sugar-free) jelly. Always add agar agar only when the liquid is warm, otherwise lumps may form. Because it gels at room temperature, it's important to work quickly!

Usage
Agar-agar binds at least twice as strongly as gelatin. For a medium consistency, use 3-4 g per 500 ml of liquid. For a hard consistency, use 5-8 g per 500 ml, and for a soft consistency, use 1.5 g per 500 ml. Add to your baking while the liquid is still warm and stir quickly to prevent lumps. Simmer gently for about 2 minutes. Let set for 1-4 hours.

After opening, store airtight in a dry, dark place at room temperature (max 20 °C).
