Selenium is an essential mineral found in minute quantities in the body. Its physical properties are very similar to those of sulfur.

The selenium content of foods depends on the amount present in the soil, either directly (in plant foods) or indirectly (in animal products containing selenium from animal feed). Even when sufficient selenium is present in the soil, its uptake by plants can be inhibited by sulfur in commonly used fertilizers and by sulfuric acid compounds in acid rain.
