DPP-IV (full name: dipeptidyl peptidase IV) is a naturally occurring enzyme found in the body, including the small intestine. There, it helps break down proteins from our diet, particularly so-called proline-rich proteins such as gluten (from grains) and casein (from dairy products). Many "tough" proteins are only broken down to a limited extent by conventional digestive enzymes. DPP-IV can cleave specific short protein chains (peptides), allowing them to be better digested and absorbed.
