Lycopene is a carotenoid – a natural pigment that gives some fruits and vegetables their red color.
Tomatoes provide approximately 80% of the lycopene in our Western diet. Tomatoes processed at high temperatures contain lycopene in a form that the body can utilize more effectively than raw tomatoes.
However, due to the 'breeding frenzy' and a society characterised by speed and haste, a tomato has little opportunity to actually produce lycopene.
