Mattisson organic olive oil is made from a blend of different olive varieties: Picual, Picudo, Hojiblanca, and Arbequina.
This combination ensures consistent quality and a balanced flavor.
Production process
The pressing process is entirely mechanical at low temperatures, preserving the nutrients and flavors of the olive.
No chemical processes or additives are used.
Characteristics & Flavor Profile
An important characteristic of high-quality extra virgin olive oil is its low acidity: this oil has an acidity of a maximum of 0.8%.
In terms of taste, there is a beautiful balance between fruity, bitter, sharp, and sweet.

Organic extra virgin olive oil consists mainly of the monounsaturated fatty acid omega 9 and in smaller quantities of omega 3 and 6.
