Ume Su is a pickled preparation made with umeboshi apricots and shiso leaves, which give it its beautiful pink color. The umeboshi apricot is an ancient Japanese fruit that remains popular today. Its flavor is unique, simultaneously distinct, fruity, and sharp.
Ume Su is already salty, so there's no need to add extra salt to your preparations. Ume Su is the result of a fermentation process, which stimulates digestion and has a beneficial effect on the digestive system. Fermenting organic Ume Su produces more lactic acid bacteria, an acid that brings the final product's acidity to 4°.
