Usage
Shoyu and tamari are flavor enhancers, the healthy and liquid counterparts of bouillon cubes. They are equally suitable for both Western and Eastern cuisine. Use them not only to season dishes but also to enhance the natural flavors of ingredients, both during cooking and at the table. Shoyu's characteristic flavor results from the aromatic compounds present during fermentation. These are temperature-sensitive. Therefore, shoyu cannot withstand prolonged heating and should only be added at the end of the cooking process to preserve its flavor. Shoyu pairs perfectly with pickles, stir-fries, rice, noodles, veggie sushi, sashimi, or steamed vegetables, with mirin (rice wine), wasabi, ginger, or grated daikon.
