Sunflower seed oil is one of the most "multifunctional" vegetable oils. Cold-pressed sunflower seed oil contains a high percentage of polyunsaturated fatty acids, is neutral in odor and flavor, and is relatively inexpensive.
The sunflower is an annual plant that grows up to 3 meters tall with a straight stem and large yellow flowers with a brown center. In fact, a single sunflower contains up to 3,000 flowers. It is this species that is cultivated for its oilseeds. These seeds—more than 1,000 per flower head—are usually light black and white striped, although other colors also occur.
