Buckwheat was a commonly used food source until a century ago, but it has since fallen out of use. Many people think that buckwheat is a grain. However, this is not the case. Buckwheat is an herbaceous plant grown in the Netherlands, but originally from China. Buckwheat grains are the seeds of that plant.
The seeds, once dehulled, are then flattened. These can be made into porridge, sprinkled into your muesli, or used to bake cookies. The flakes also make a very good thickener and cook quickly. The cooking time for the flakes is approximately 10 minutes with a 5-minute resting period.
