Lavender is an evergreen, woody shrub that can grow up to 1 meter tall, with light green, narrow, thread-like leaves and violet-blue flowers. Lavender is now cultivated worldwide, but its origins include France, Spain, Italy, England, Australia, Tasmania, and Greece. The oil is extracted from the flowering tops by steam distillation and is colorless to pale yellow with a sweet, floral, and spicy aroma. It is used in antiseptic ointments and as a fragrance component in soaps, cosmetics, lotions, perfumes, and as a flavoring in foods and beverages.
