Before the ocean water reaches the Khoisan salt pans, it has been naturally filtered through a 2,000-meter underground barrier of shell beds, quartz sand, and limestone. Only in the summer, under the hot African sun and a gentle breeze, do beautiful fleur de sel salt crystals emerge at the surface.
